6-8 Servings
- 4 Sweet Potatoes, scrubbed and cut into fries
- 2-3 Tablespoons of Olive Oil
- 1 Jalapeno, thinly sliced (optional)
- ½ teaspoon of ground Cayenne pepper (optional)
- Salt and pepper, to taste
Preheat oven to 375 degrees.
Place all ingredients in a large bowl and toss to coat with oil and pepper and spice.
Spread potatoes out in a single layer on a cookie sheet and bake for 45-50 minutes or until golden brown and tender.
Variation:
Mix up different potato varieties like russet, sweet, purple, etc.

The trick to cooking potatoes evenly: cut the fries the same size!
