I hope everyone had a beautiful Easter weekend! We celebrated with family dinner on Palm Sunday, because that’s when the kids were home. I’m just so grateful for the few nights that we are together that we do sit down as a family to eat at the table.
It was really nice to have the whole family together, my son and daughter both home from school…it just feels comfortable to have my chicks in the nest. So I started to think about comfort foods!

Our Palm Sunday meal was full of my family’s favorite comfort foods. My daughter is a vegetarian, my son is a meat and potatoes guy and my husband loves fish. So I did surf and turf…well, sort of. I made a spiral glazed ham and salmon…and if ya think about it…there ya go! That’s surf and turf!

I have to say, I made some beautiful starters for our meal. I roasted peppers and arranged them with tomato salad and fresh cut mozzarella to enjoy with our bruschetta. (That’s Broo-SKETA, not Broo-sheta (a Brochetta is a skewer for a kebab 😉

My display looked just like a flower. Pretty! And, even though this seems out of nowhere, one of my family’s comfort foods is a great Greek salad with feta cheese, olives, cucumbers, olives.  I dressed it with a fantastic fig balsamic vinaigrette.

I made a nice little glaze for the ham, really easy. I love those spiral hams with the bone in—so delicious and practically already made for you! And then I had this magnificent wild caught salmon. I served it with a butternut squash and potato fricassee (great if you have a vegetarian you love!).

We also had a Chocolate Fudge Cake with Cappuccino Buttercream Icing that I picked up at the bakery…oh. my. goodness. Chef Jacquie ate a piece of cake! It was moist, rich and dense. Truly a sweet comfort!
