Recipe by Chef Jacquie

–Ingredients

  • 2 cucumbers cut lengthwise, peeled, seeded and thinly sliced
  • 2 Tablespoons of fresh coriander leaves
  • 2 Tablespoons of chopped roasted peanuts
  • 1/4 cup diced red onion
  • 1 red hot Thai chili pepper, sliced thin

–Dressing Ingredients

  • 2 Tablespoons Thai fish sauce
  • 1 Tablespoon Garlic chili pepper sauce
  • 1/2 cup rice wine vinegar
  • 1/2 cup sugar

In a small sauce pot, over medium heat, make the dressing by adding Thai fish sauce, vinegar and sugar; cook until sugar is dissolved.

In a medium bowl, add cucumbers, onion, Thai chili pepper and dressing, stir together until incorporated; let marinate for about 30 minutes.

Garnish with fresh coriander leaves and chopped peanuts.

Serve with chicken or beef Satay and it is best if eaten the same day it is made.
