Recipe by Chef Jacquie

1-3/4 cups all-purpose flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 cup milk
2 Tablespoons oil
1-1/2 teaspoons vanilla
1-1/2 cups chopped and peeled pears (about 3 pears – ripe)

Preheat oven to 400°.  Line 12 muffin tins with paper baking cups.

In medium bowl, combine dry ingredients: flour, sugar, baking powder and salt; mix well.

Add wet ingredients in a small bowl: beat egg, stir in milk, oil and vanilla until thoroughly mixed; then, stir in pears.

Add wet ingredients to dry ingredients; stir just until combined and spoon batter into baking cups.

Bake for 15 to 20 minutes or until muffins are golden brown and toothpick inserted in center comes out clean.

Great eaten alone or with a scoop of ice cream…enjoy!
