  • 5 large sweet potatoes
  • ½ cup of orange juice
  • ½ cup of pineapple juice
  • ¼ stick of butter
  • 1 cup of brown sugar
  • 2 Tablespoon honey
  • Pinch of salt
  • Ground cinnamon

Scrub and clean the potatoes and then place in large pot of cold water.  Place on stove on high heat and bring to a boil.  Once a boil is reached, reduce to simmer and cook for 30 minutes or until fork has only a little resistance when inserted.

Place the potatoes in cold water to cool off. Once able to handle peel, quarter and place them in an oven ready baking dish.

Meanwhile, in a small sauce pot, add orange juice, pineapple juice, butter, sugar, honey and salt and bring to a boil.  Once mixture is boiling lower heat to simmer and cook for about 10-15 minutes or until it reaches a syrupy consistency.

Pour syrup mixture on top of potatoes and then sprinkle with a little ground cinnamon on top.

Place in 350 degree pre-heated oven and bake for 20 minutes.
