Recipe by Chef Jacquie

Ingredients:

  • 2 ripe avocados, peeled and seed removed
  • 2 Tablespoons of small diced onion
  • Juice of 1 lime
  • 1 tomato, diced
  • Salt and Pepper to taste

Place avocados in a medium sized bowl and mash them with a fork or potato masher.  Add lime juice, onion and tomato and stir until all ingredients are blended.  Season with salt and pepper.

Serve with tortilla chips or as a condiment for tacos.

Options: crab meat, goat cheese, minced cilantro and roasted peppers
