Arugula and Strawberry Salad with Lemon Vinaigrette and Goat Cheese

Bright, simple, and bursting with flavor – this is your go-to dish for warm-weather lunches, backyard dinners, or a light starter that tastes like sunshine on a plate.

Ingredients

For the Vinaigrette:

  • Juice of 1 large lemon (2–3 ounces)
  • 10 fresh mint leaves, finely chopped
  • 2–3 ounces of extra virgin olive oil
  • 2 tablespoons of honey

For the Salad:

  • 1 small package of arugula
  • 1 (8 oz.) pack of strawberries, rinsed, stemmed, and sliced
  • 12 mint leaves, cut into chiffonade strips
  • 1 small package of soft goat cheese, crumbled

 

Directions:

To Make the Lemon Mint Vinaigrette:
In a sealed jar or container, combine lemon juice, chopped mint, honey, and olive oil. Shake vigorously until emulsified. Set aside.

To Assemble the Salad:
In a large bowl, combine arugula, sliced strawberries, and mint chiffonade. Pour in half the vinaigrette and toss until the leaves are lightly coated. Add more dressing if needed.

Plate a generous mound of salad on a chilled plate, sprinkle with crumbled goat cheese, and drizzle with a final touch of vinaigrette.

 

Serves: 4
