Chef Jacquie Recipe

–Cajun Shrimp

  • 1 pound medium shrimp, peeled and deveined
  • Cajun Spice Mix (see below*)
  • 16 warm tortillas
  • Lettuce, finely shredded
  • Pineapple, grilled and then diced
  • Sour cream
  • Scallions, sliced thin

–Cajun Spice Mix

  • 1 Tablespoon of vegetable oil
  • 1 Tablespoon kosher salt
  • 1 Tablespoon fresh ground black pepper
  • 1 Tablespoon garlic powder
  • 2 teaspoons chili powder
  • 1 teaspoon mustard powder
  • 1 teaspoon cayenne pepper

Put tortillas in foil and place in the oven, to warm through.

In a a pan, over medium-high heat, add 1 Tablespoon of oil.  Add shrimp and immediately season liberally with Cajun spice, cook for about 1 minute.

Turn once and continue to cook until shrimp are pink and completely opaque, roughly, another 30 seconds.

Grill pineapple slices.  Let them cool and then cut them into small dice.

On a large serving, stack two tortillas on top of each other per serving.  Divide the shrimp among the tacos and then top with sour cream, shredded lettuce, diced pineapple, and scallions.

Serve immediately.
