Have you ever had one of those days where you have been so busy working and know there is absolutely nothing in your fridge to make for dinner? On these nights two possibilities are the answer, make soup or have breakfast for dinner. This is also when my creative side comes out because I never know until the last minute, what’s truly for dinner. It’s really fun for me; I become a short-order cook for the night. My husband and kids love it and all place their orders…chocolate chip pancakes, Challah French toast, cheesy scrambled eggs. It’s a quick, healthy meal and you are saving money because you are not throwing out food. I always use that overripe banana in my pancake batter or that little piece of cheddar cheese which is perfect for scrambled eggs. Some other suggestions: Eggs Benedict or Florentine, bacon/egg/cheese sandwiches, cinnamon/raisin French toast, frittatas, omelets, or quiches with a variety of fillings like ricotta, mozzarella or provolone cheese, ham, sausage, diced potatoes, leeks or tomatoes are always tasty.

My favorite is peppers and eggs, I guess because it brings back memories of high school lunches my grandmother used to pack for me.  I now serve it to my children for breakfast, lunch or dinner.
