Recipe by Chef Jacquie

–Blueberry and lime simple syrup Ingredients
Fresh squeezed lime juice (4 limes)
Zest of 1 lime
1/2 cup water
3/4 cup sugar
1 package (4.4 ounces) Blueberries

–Directions to make blueberry and lime simple syrup
Place all ingredients except blueberries in a small sauce pot, over medium heat and stir with wooden spoon until sugar is dissolved.
Once sugar is dissolved, bring to a boil and cook for 2 minutes.  Remove from heat, strain and place back on the heat.  Add blueberries and cook for a few more minutes.
Remove from heat and cool completely.

–Cocktail Ingredients
2 ounces blueberry and lime simple syrup
1 ounce rum
1 ounce sparkling white wine (Sofia Blanc de Blanc from Francis Ford Coppola Wineries is my favorite)
2 ounces still or sparkling water
Lime wedge, lemon balm or mint leaves for garnish

–Directions to Make Cocktail
Fill a tall glass with ice.
Add simple syrup, rum and sparkling wine, top off with sparkling water and stir until well blended.
Garnish with lime wedge and lemon balm/mint leaves.
