Can’t believe it’s already the end of the summer and time for “back to school”. It seems there is never enough time to get everything done during this time of year, let alone being able to prepare a good, healthy, quick meal in our children’s lunchboxes.

Leftovers are my favorites for lunch add in a salad or create a sandwich. With Labor Day quickly approaching; how about grilling a few extra pieces of chicken for back to school lunches, make chicken salad or cube it and add to your child’s favorite salad. How about a chicken sandwich with spinach, tomatoes and slices of cheese? Healthy and not your same old cafeteria fare.

There are still some wonderful tomatoes and cucumbers at the farmers’ markets…nothing like a tomato and cucumber salad for lunch, add a multi-grain roll and some cheese and this is a great, quick, and healthy lunch. Let’s not forget fruit this time of year; it is so ripe and sweet like sugar, especially watermelon and peaches. Ask your child which fruits s/he wants for lunch. A few tips: help your child make their own lunch the night before and always encourage water as their drink of choice.
