Recipe by Chef Jacquie

6-8 Servings

  • 4 Sweet Potatoes, scrubbed and cut into fries
  • 2-3 Tablespoons of Olive Oil
  • 1 Jalapeno, thinly sliced (optional)
  • ½ teaspoon of ground Cayenne pepper (optional)
  • Salt and pepper, to taste

Preheat oven to 375 degrees.

Place all ingredients in a large bowl and toss to coat with oil and pepper and spice.

Spread potatoes out in a single layer on a cookie sheet and bake for 45-50 minutes or until golden brown and tender.

Variation:
Mix up different potato varieties like russet, sweet, purple, etc.

Chef Jacquie’s Culinary Tip:
The trick to cooking potatoes evenly: cut the fries the same size!
