The Incas, held this precious crop as sacred 3,000-4,000 years ago. What is Quinoa? According to Wikipedia it’s a grain that originated in the Andean region of Peru. It is rich in calcium, phosphorous, iron, essential amino acids, and a good source of dietary fiber and protein. It is a complete protein, which is unusual among plant food. It looks like tiny translucent couscous and you can substitute this grain in any recipe calling for couscous or rice. With so many food allergies today, especially gluten, people are turning to pasta alternatives like Quinoa and other grains.

The pasta looks like egg noodles and tastes like regular pasta when you add tomato sauce/gravy. Wow, this means you can serve your children buttered noodles using a pasta that is a complete protein, much healthier and no change in taste; now that’s got to make you feel better! This is a great breakfast too; add dried fruit, honey and nuts, a flavorful hot cereal packed with protein and punch!

Buon Appetito!
