I’ve got some insider tips for you on whipping up a trio of cheese dips that’ll have your guests begging for more. You know, in Italy, sharing is everything—it’s all about celebrating life’s pleasures together.

So, picture this: unexpected guests pop by or you’ve got a soirée planned, and you want to impress without breaking a sweat. That’s where these easy-peasy dips come in. Now, I highly recommend drizzling them with a bit of olive oil for that extra ‘wow’ factor, but hey, they’re still pretty darn delicious without it.

And here’s the kicker: all three dips are made using just one type of cheese, making your prep time a breeze. So, head to your favorite local Market, grab a few ingredients, and let’s whip up some Sweet Lemon Honey, Savory Orange, and the crowd-favorite Kalamata Olive & toasted Pine Nut cheese dips. Your guests will be raving about these at the next gathering!

INGREDIENTS: 

Prepare to dazzle your taste buds with just one pack of Anthotyro cheese, transformed into three delectable dips:
  1. Sweet Whipped Lemon and Honey Cheese Dip
  2. Savory Whipped Citrus Cheese Dip
  3. Whipped Kalamata Olive and Toasted Pine Nut Cheese Dip

Take 1 pack Anthotyro cheese (or see notes) separated into thirds to make 3 delicious dips:

1- Sweet Whipped Lemon and Honey Cheese Dip

  • 1 teaspoon Greek yogurt
  • Zest of 2 lemons (fold in some and reserve some to sprinkle on top)
  • ½ teaspoon salt

Garnish: Honey to drizzle

2- Savory Whipped Citrus Cheese Dip

  • 1 teaspoon Greek yogurt
  • Blood Orange – zest of 1 (reserve to sprinkle on top)
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper

Garnish: Drizzle of Sicilian EVOO

3- Whipped Kalamata Olive and Toasted Pine Nut Cheese Dip

  • 1 teaspoon Greek yogurt
  • ¼ teaspoon of chili pepper flakes
  • ½ cup Toasted pine nuts (reserve to sprinkle on top)
  • 1/8 teaspoon Sicilian dried oregano
  • 1 teaspoon Italian parsley
  • 1 tablespoon chopped Kalamata Olives

Garnish: Drizzle Greek olive oil

DIRECTIONS: Let’s dive into the effortless preparation of these mouthwatering dips.

  • Start by dividing 1 pack of Anthotyro cheese (18 oz) into thirds by placing in three separate bowls (6 ounces each), each destined for one of our flavorful creations. 
  • Whip each portion in a food processor until luxuriously smooth.
  • Follow the unique inclusions for each dip recipe; one, two, and three. Fold in matching listed ingredients for example: citrus zest, salt, white pepper, oregano and chili flakes.
  • Garnish each dip with a touch of finesse – drizzle honey over the Sweet Dip, adorn the Savory Citrus Dip with zest, and top the Kalamata Dip with EVOO and toasted pine nuts.

CHEF JACQUIE’S RECIPE NOTES: 

  • Anthotyro cheese can be substituted for 15 ounces of ricotta cheese and 3 ounces of French feta that can be purchased at Claudio’s Specialty Foods and fold in 1 teaspoon of yogurt in each to make creamy.

  • Sweet whipped lemon and honey cheese dip can be paired with sweetened pita chips or regular.
  • Savory whipped citrus cheese dip can be paired with your favorite flatbread crisps.
  • Whipped kalamata olive and toasted pine nut cheese dip can be paired with olives and fresh vegetables. And try the seeded grain- free crackers.
